Remaking my all time favourite tofu dish - this spicy stir fried tofu with hoisin sauce, roasted peanuts and Chinese cabbage.
I guarantee it's a flavour bomb and tastes amazing on its own or with a side of black rice (like in this picture). I’m pretty sure it would also be amazing in a wrap, or as a stuffing for Chinese dumplings.
For the Sauce:
2 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp white rice vinegar
Other ingredients:
1 block extra firm tofu, cubed
1/2 head Chinese cabbage, chopped into squares
2 finger-size red chillies, deseeded and minced finely
3 cloves garlic, chopped finely
1-inch piece ginger, chopped finely or grated
3 spring onions, chopped finely
1 cup roasted peanuts, skins removed
2 tbsp oil
Salt, to taste
Mix the ingredients for the sauce and set aside.
In a large wok or skillet, heat the oil, then add chillies, garlic, and ginger. Cook for 1 minute.
Add the tofu and cabbage, salt, stir well and cook, uncovered for 2 minutes, stirring frequently.
Add the sauce, mix really well and cook uncovered at medium-high heat for another 4-5 minutes. The sauce shouldn’t evaporate completely - if it becomes too dry, add a couple of spoons of water. Lastly, add the spring onions and mix well before serving.
